HAINANESE CHICKEN RICE RECIPE
THE AJINOMOTO BRAND CHICKEN POWDER MIX
Ingredients
Hainanese Chicken
3 pcs. (300g) Chicken, thigh, medium
3 pcs (200g) Chicken, leg, medium
3 cups (750ml) Water
1/4 cup (17g) Ginger, medium strips
3 leaves (17g) Pandan leaves
1 Tbsp. (15ml) Soy sauce
2 tsps. (8g) The Ajinomoto Brand Chicken Powder Mix
Hainanese Rice
2 tsps. (10ml) Cooking oil
1 Tbsp. (10g) Garlic, minced
1 Tbsp. (8g) Ginger, minced
2 cups (450g) Rice, uncooked
2 1/2 cups (625ml) Water
2 tsps. (8g) The Ajinomoto Brand Chicken Powder Mix
Ginger Sauce
1/4 cup (50ml) Cooking oil
4 Tbsps. (32g) Ginger, minced
2 Tbsps. (7g) Spring onion, minced
1/2 tsp. (2g) The Ajinomoto Brand Chicken Powder Mix
Sesame Soy Sauce
2 Tbsps. (30ml) Soy sauce
1 1/3 Tbsps. (20ml) Sesame oil
1 tsp. (5g) Sugar, brown
Chili Garlic Sauce
1 Tbsp. (15ml) Cooking oil
1 1/2 Tbsps. (15g) Garlic, minced
1 Tbsp. (13g) Tomato paste
1/3 cup (27g) Siling labuyo, minced

If you are trying to gain weight, choosing chicken leg or thigh would be beneficial for you than consuming the chicken breast part because the leg/thigh parts have a higher protein and fat content.

Procedure
- BOIL. In a pot, place chicken and combine with water, ginger, pandan leaves, soy sauce, and The Ajinomoto Brand Chicken Powder Mix. Mix and let it boil covered until almost all liquid is evaporated and chicken is tender then strain it out and set aside.
- SAUTÉ. To make Hainanese Rice, in a low heated pot, add oil and sauté garlic and ginger. Add rice, water, and The Ajinomoto Brand Chicken Powder Mix. Mix well and let it cook, covered. Set aside.
- SAUTÉ. To make the ginger sauce, heat the pan, add oil and sauté ginger and spring onion.
- SEASON. Add 1/2 tsp of The Ajinomoto Brand Chicken Powder Mix. Mix well and set aside.
- COMBINE. To make a Sesame Soy Sauce, get a mixing bowl, combine soy sauce, sesame oil, and sugar. Mix well then set aside.
- SAUTÉ. To make chili garlic sauce, add oil in a low heated pan and sauté garlic until fragrant. Add tomato paste and let it cook for a few minutes. Add siling labuyo and let it simmer for a bit and set aside.
- ASSEMBLE and SERVE. On a plate, put 1 serving of rice and chicken. Place 1/2 Tbsp of each sauce on the side. Serve and enjoy.

Cooking Tips
Neutral oils such as light olive oil and canola oil are recommended for the sauces because it does not add its own flavor in the sauces. It also has a high smoke point that makes it suitable for cooking because it can withstand heat, thus prevents a bitter taste from smoking of fat.
